An approximate menu for a large family, grocery purchases and supplies were reconstructed from household records and the memories of the Nikitin children.

Sample family menu for every day

Breakfast. Any liquid porridge, in the most difficult times - half and half water with milk + margarine instead of butter. Milk soup (with rice or noodles, usually half and half milk and water, but an egg was added to it). Milk with fresh bread. If you have an egg, then a soft-boiled one, one per person. Bread with butter and cheese.

Dinner. The first was almost always the case. Mom cooked excellent borscht or cabbage soup with marrow bones. A huge saucepan was enough for two or three days.

Also kulesh, pea soup, chicken noodles. Mom made the noodles herself. One chicken was boiled per pan and then divided among everyone: some got a wing, some got a leg. Dad, putting the chicken into bowls, told a fairy tale about how a man divided a goose.

There were also soups from bags and canned fish. In difficult times - “dumpling soup”.

The second is usually without meat. For example, macaroni and cheese. Or buckwheat porridge with butter (a separate dish).

Dinner. Mashed potatoes, pasta, rice, buckwheat porridge. Or a thin layer of minced meat in a potato casserole.

Here, for example, is a regular dinner: macaroni and cheese + tea with sugar, bagels, gingerbread.

Meat was rarely eaten, usually in the form of cutlets and as an addition to the main dish. Never cooked fried meat or with hot sauces. If fried potatoes, then without meat, but with salad. More often - stewed potatoes with meat, cooked in a pressure cooker.

There were a lot of salads. Cabbage - green canned peas - greens. Or tomatoes - cucumbers - onions. Or homemade sauerkraut.

All salads were always dressed with sunflower oil; my mother never used mayonnaise.

But they ate fish more often than meat. My favorite is cod stewed with onions and carrots. Hake, pollock, iced. My mother loved fish all her life. Dad absolutely loved everything. There was often canned fish (you can eat it with bones): sprat in tomato sauce, sprats, mackerel, saury.

Vinaigrette - with sauerkraut or herring. The vegetables were steamed in a pressure cooker (we bought it specially).

To this day, we really love my mother’s potato salad: the potatoes are steamed in their skins, quickly peeled and while still hot, mixed with thinly sliced ​​onions (preferably red) in half rings, seasoned with delicious sunflower oil and salt. It's best with herring, but you can do this too.

Pancakes, pancakes - with butter, sour cream, jam. Cottage cheese was rare; usually cottage cheese was eaten like this, with sour cream and sugar.

Casseroles - cottage cheese, potato, pasta, etc.

The growing girls baked a lot themselves, started a book of home recipes and dreamed up fantastic dishes. From the age of 12, it was mainly Olya and Anya who were busy in the kitchen.

We ate fruits and vegetables according to the season and as much as possible: grapes - a box, apples - a box, etc.

They bought a cartload of watermelons - they were 5-8 kopecks/kg. And if the watermelon or melon is just them, no more food with them.

In winter, literally every day - grated carrots. In the summer, every day they brought bunches of greenery from the garden, and in the spring they cooked sorrel and nettle soups.

For dessert - dried fruits: raisins, dates. And also marshmallows and jam. Halva - sunflower, tahini - was loved by everyone and was bought in boxes of 10-16 kg.

Gingerbread cookies, 1 kg - 1 rub. Loved it very much and bought it often.

Granulated sugar, 1 kg - 90 kopecks. It took a lot.

Potatoes, 1 kg - 10-12 kopecks. Carrots, beets - 15-20 kopecks.

Buckwheat, 1 kg - 55 kopecks. (but there was almost none in stores), round rice - 88 kopecks. Pasta, I think, 33 kopecks. per kilogram.

In the garden there were gooseberries, raspberries, some strawberries, dill and parsley, carrots, sorrel, radishes, apples, cherries, and plums. Sometimes our family allowed ourselves durian - once or twice a week. But then they told us where we could buy very tasty cherry tomatoes and wonderful, local avocados... And it began - the children almost every day began to ask for salads from these two products with green onions and lemon or lime juice. We had nothing against it, let them eat if they want, but we noticed how quickly they started to gain fat. It is better to take a wait-and-see attitude: do not impose or press. This usually works - sooner or later priorities change, the range of tastes expands, and the hated broccoli becomes a favorite side dish, and zucchini pancakes become a wonderful afternoon snack.

Big family and small portions

Mothers of many children have to deal with one stereotype: a bucketful of food prepared for the week - an image that is fixed in the minds of the majority. This ever-boiling pot of the day before yesterday's borscht could have become my nightmare if I didn't have a sense of humor. In fact, everything is different. I cook in small batches and solve problems as they arise. I’ll say right away: all this is possible only because I don’t buy groceries myself. This task lies with the head of the family, and he copes with it brilliantly.

In practice it looks like this. I rarely make such substantial dishes as solyanka or jellied meat. Almost everything I make comes together quickly, very quickly, or on its own. There are household appliances for this: a blender, a mixer, a sensitive and obedient oven. You can bake, for example, a good piece of pork ham in it. I spend no more than 10 minutes manipulating the meat: salt, season with paprika, garlic, thyme and bay leaf, wrap tightly in a double layer of baking paper and place in the oven preheated to 150°C.

You don’t need to do anything else - after 3.5 hours a signal will sound that the wonderful boiled pork is ready. Once cooled, it can be cut into thin slices and used for breakfast sandwiches. You can also bake a whole chicken, disassemble it into small pieces and use it in a salad with couscous, raisins and pistachios, stuff it into pancakes or hide it in rolls made of thin pita bread, spread with curd cheese, along with vegetables and finely chopped herbs.

What else can you do in advance?

What can be done in advance is, of course, better done in advance. For example, fillet a turkey and put it in the refrigerator in an airtight container. Or prepare minced meat for hamburgers, meatballs or cutlets. Remove the fish from the freezer and defrost it properly, without haste, on the bottom shelf of the refrigerator. Be sure to cook soup or, more precisely, two soups, no more than 1.5-2 liters each. This is not at all because I am so kind, but simply so that the “refuseniks” still eat: if not cream of champignon soup, then lentil, if not minestrone, then pumpkin.

Children are always happy with jelly or compote. It’s also better to prepare them in the morning, so that by lunchtime they “ got there" In between, you can bake muffins, a chocolate cake or a little bit of cookies - just one baking sheet. After all, it is possible that someone will want something sweet or need consolation: childhood life is not an easy thing. All these operations take no more than one and a half to two hours, so there is a lot of free time left before the active actions caused by the children returning home begin.

How to diversify standards

There is no need to reach the point of fanaticism. It's funny to cook a separate handful of rice for everyone. But make it from pre-cooked rice individual puzzle- it's exciting.

  • Puzzle No. 1: vegetables ( for example, red bell peppers, celery, carrots, garlic, spinach, mushrooms), sliced ​​and quickly fried in a wok in olive oil, + rice - for two vegetarians. 15 minutes!
  • Puzzle No. 2: chicken breast cut into narrow strips + vegetables, also quickly fried in a wok, + rice.
  • Puzzle No. 3: shrimp, the same wok, a drop of sesame oil, lemon, garlic + rice.

Same with pasta. Cook a pack of penne, spaghetti or fusilli for 15 minutes, then pasta with mussels, tomato sauce, bacon and cheese and cream sauce, with tuna. Each option takes another 10 minutes - you don’t even have time to get tired.

Afternoon snack and dinner

Ossetian pies, khachapuri, pizza or kulebyaka with fish, spinach, mushrooms and rice are perfect for a snack between lunch and dinner. If I make yeast dough after lunch, it will reach perfect condition by this time. I knead the dough from two kilograms of flour and immediately put half of it in the refrigerator in a tightly closed bag. There it matures very slowly, without having time to acidify, and by the next day it acquires a different taste and structure.

From such " slow The dough can be baked into breadsticks sprinkled with seeds and oatmeal, deep-fried into pies with potatoes, or rolled out thinly in a round pizza pan, topped tightly like tiles, covered with apple slices, sprinkled with almonds and powdered sugar, or poured with maple syrup. At an oven temperature of 200 °C, the cake is baked in 15-20 minutes. For greater effect, it’s a good idea to turn on the oven in grill mode for a couple of minutes - then an appetizing crust will appear along the edges of the apple slices.

Having dinner children always with an enviable appetite - they will never turn down scrambled eggs or an omelet, pasta salad and roasted vegetables, or a cottage cheese casserole with canned pineapple, raisins or peaches.

Most likely, my tactics are flawed. We rarely sit down at the table with the whole family. In my defense, I can say one thing: in our village house there is a specially ordered table that seats everyone. And it can be very fun and delicious.

And the kitchen is our island. An island of trust, secrets, conversations, decision making. I love it and we never get bored.

For quite a long time, being a mother of one child, I believed that there was no difference in how many children to feed, one or more, and the problem was solved by increasing the size of the pan, however, in practice everything turned out differently. Each of my children due to age characteristics, your daily routine, your nutritional needs, as well as “I love” and “I won’t”, between which there are maneuver.


It became necessary for me to maintain a balance between convenience of kitchen life for me, the taste and benefits of dishes for children, as well as a special feeling for each member of my family that you are at home, that such a thing is here food you love, and which is not found anywhere else.

And the very first one was adopted simple principle: Children should eat the same things as adults, and adults should prepare food so that children can eat it too.

Cooking food every day, in small portions, and I spend no more than an hour and a half a day in the kitchen. Almost everything I make is prepared quickly, very fast or by itself. My main helpers in the kitchen are oven and multicooker.
